There’s only a few times a year that roasted vegetables get all the love, but we think they deserve a spot at all meals besides just Thanksgiving and Christmas dinner. With the ability to pair with almost any dish and sauce, we think they’re special for all occasions.
Sweet potatoes are one of my favorite vegetables and while I love to sit down with some sweet potato fries, there’s a way to make roasted sweet potatoes just as good! Ever since we got our air fryer, we’ve been loving to test it out with different recipes and we think one takes the cake!
It’s perfect to take as a side to your Thanksgiving or Christmas dinner and works to make any weeknight meal healthier, paired with our Italian Herbs Oil, these sweet potatoes are sure to impress!
2 Sweet Potatoes
2 Tablespoons Itialian Herbs Oil
2 Teaspoons Salt
Air Fryer
Knife
Skin two sweet potatoes and cut into cubes of similar size and shape. Don’t worry too much about the sizes being perfect shapes as every sweet potato is seemingly designed to make your life difficult! Then simply add 2 tablespoons of our Italian Herbs Oil with 2 teaspoons of salt to the sweet potatoes and place in an air fryer select the French Fry setting. The sweet potatoes should come out crispy on the outside and soft on the inside Serve in a bowl atop with fresh herbs and another tablespoon of our Italian Herbs Oil and serve!
